The Cellar
In order to preserve the freshness of the grapes, the sorting process is swift and carried out by hand on the roof of the cellar. Once the raw grape juice has been extracted it is fermented in stainless steel vats with our master vintner keeping a careful, experienced eye on proceedings. Fermentation temperatures are kept low. Once the young wine is ready it is laid down, where appropriate, in 300 litre barrels made from French and American oak in order to mellow tannins and unlock the grapes’ rich taste and bouquet.
Any visitors who are curious to watch us hard at work on this, or any, year’s vintage can enjoy sweeping views of the production floor from a raised viewing platform.

The cellar lies beneath a castle in the centre of the vineyard. The design of Treaty Port’s cellars is the product of arduous research into the perfect conditions for wine production coupled with a desire to allow our premium wines evolve in fitting surroundings.
